Chef Caroline Gone Fishing!

My name is Caroline Danaher, aka “Darcy”, and welcome to my blog!

Food is and always has been my passion, from a very young age. I am currently in my final year of a BA Hons Degree in Culinary Arts at the Institute of Technology, Tralee, Co. Kerry.

I grew up in Lisdoonvarna, Co. Clare and moved to the beautiful seaside town of Dingle 18 years ago.

My introduction to food and the greatest influence on my passion for it came from my Grandmother.My Grandmother Kathleen was a fantastic baker and had a dossier of secret recipes for a wide variety of mouth-watering breads, cakes and puddings.

As the years rolled on, my passion for food and creativity intensified and I opened my own Café in Dingle several years ago, catering to the local and tourist market, utilising local Kerry produce whenever possible.

I am currently the Chef at The Boatyard Restaurant on the Dingle Marina, and the food I’m blessed to create on a daily basis is testimony to this passion.I’ve been told on several occasions that my love for food shines through onto the plate, helped only by the bright Dingle light.

One of my primary goals for 2015 is to increase the consumption of local produce through innovative and inventive culinary creations and delights.My approach is to get our customers to experiment with and eat more locally sourced food, which in turn helps me to support local producers.

I am dedicated to providing customers with memorable culinary experiences of The Wild Atlantic Way.

Being a food entrepreneur is a special challenge, but one I thoroughly embrace and enjoy.

I look forward to sharing some of my valuable recipes, tips, advice and guidance with every visitor to my site as well as connecting with food lovers everywhere.
